Butternut Squash

Yield: 6 servings

Ingredients:

Slice the squash in half and scoop out the seeds. Peel shell from squash with vegetable peeler.

Slice peeled squash into 1/2 inch strips and then cube. Place cut pieces into round baking dish that has a cover or can be covered with foil.

Stir together melted butter, vanilla, nutmeg, salt and pepper. Pour over the cubed squash.

Bake in a preheated 350° oven and for 1 hour or until squash is fork-tender.
